EXTRA OLIVE OIL

All the territory of Sonnino is completely covered with olive - yards: 
Oil is the most importantresource of the town.
Its oil is plentiful and is truly good: even if the production is not really  industrial, the oil is exported also to the USA, as you can see on the picture (the oil from Sonnino in q shop of California).

DRIEDS FIGS
The production is only artisan according to the tradition.
Drieds figs are manufactured in "paniceglie", "trezze"
and "crocette" (the best)
Last year in November the first feast of the dried figs took place,but to find them you must rely on private person, because the production is privite and limited.
 
CIECAPRETE
In othe places they are called "strozzapreti": people use floure paste and water. It's dressed with gravy or game sauce. You can taste this dish in every resturant of the town.
 
THE CANESCIUNE
A typical cake made of cottage cheese for the feast of the Torches.

LA CACIOTTA
A typical cheese made with latte of sheep. It can be fresh or seasoned, simple and with chili pepper.
